Mango Chia Pudding – A Summer Delight

The season of summer is back and so is the season of mangoes, a much awaited fruit for most of us. Sometimes i wonder why mangoes are not available throughout the year ? But i guess it will not get the king of fruits status, if it is easily available throughout the year. Well having said that, i have already eaten half a dozen and before I dwell on the next half i thought of creating a very healthy pudding along with a very special ingredient i am getting hooked to – Chia seeds. With the richness of two ingredients, here I am presenting the Mango Chia Pudding.

Before I share the recipe, here are some suggestions you can look into.

In my recipe i have used cow’s milk, but you can use almond milk if you are looking out for a vegan option. I have choosen mangoes as a fruit to go along with it but you can use strawberries, kiwi, banana etc or a mix of fruits suitable to you.

I generally make this recipe for breakfast, but this can be had as a snack in the eve, or even on the go food, at workplace or even as a healthy dessert ..anytime of the day.

Plus it is one of the easiest recipie especially for begginer cooks or people who are time bound. And if all this sounds perfect just head to the Mango Chia Pudding recipe below

Ingredients

  1. Milk – 1 cup
  2. Chia seeds – 1/4 cup
  3. Honey / maple syrup – 1 tbsp
  4. Mangoes – 1 cup

Method

  • Mix the chia seeds, honey and milk together
  • Let chia seeds soak in the milk for atleast 8 hrs in the fridge ( i do it a night before so i can consume in the morning )
  • After 8 hours, cut fresh mangoes and layer it over the mixture ( you can also use mango puree )
  • And the Mango Chia Pudding is ready to serve
